Caffè Firenze, Chez Illy – from a “burning” blog

Only three prototypes of this specific coffee machine, handmade by the Florentine company La Marzocco (founded in 1927 and the first to introduce the horizontal boiler in 1939) exist. One is operating today at the coffee house in Piazza Gae Aulenti, the new city square built among the skyscrapers in the Porta Nuova neighborhood of Milan, to enrich the nine arabica quality coffees used in the cup by Illy. I came in for a coffee by chance and was struck by the contagious passion of the barista, Orazio Martinelli, who improvised a quick tasting session and reprimanded me for adding sugar. Indeed, the surprise came from the second machine, which applies greater pressure when brewing (20 bar versus the conventional 9 bar). Such pressure produces a more abundant mixture of oxygen – water and this favours a greater crema effect in the cup and enhances the flavour of the coffee beans. Understandably, La Marzocco names this specific coffee, Caffé Firenze.
